July 2010 Cooking Instructions

 

Bali Hai Chicken - Total Time: 40 mins, Stovetop, Comes with: Rice - Thaw completely in the refrigerator.  Start the rice according to its directions. Put chicken (with onions) in a large skillet and cook over medium heat until chicken is cooked through, about 10-15 minutes (Organic chicken is done when it is firm, not soft or “chewy” in texture.  It will take about 50% longer to cook than “regular” chicken).  Stir in the coconut sauce and cook until thickened, about 5-10 minutes.  Serve over rice, with sautéed snow peas on the side.

 

Celery Prawns - Total Time: Serve cold, Comes with: Rice - If serving with rice, prepare rice as directed on bag, then proceed with the following.  Open bag; drain and discard marinade, onion and bay leaves.  Serve prawns with toothpicks or along side your rice.

 

Chipotle Tenderloin – Total Time: 30 mins, Grill or Broiler, Comes with: Rice - Thaw completely in refrigerator.  Preheat grill to medium-high heat and lightly oil the grate.  Start your rice (according to directions on the bag), so it is finished you’re your meal.  Arrange meat on the grill.  Cook for about 20 minutes, turning every 5 minutes.  Pork is done when it reaches 145°F on a meat thermometer.  Remove from grill and let it stand for 5 minutes before slicing and serving along side your rice.

 

Coconut Crusted Chicken - Total Time: 40min, Oven, Comes with: rice - Thaw completely in the refrigerator.  Preheat oven to 375¢ªF.  Remove chicken from marinade and roll in coconut.  Place in large casserole dish and bake for 30-35 minutes.  Organic chicken is done when it is quite firm to cut into, and there is no longer any “chewiness” to the texture.  Start your rice (as per cooking instructions on the bag).  Enjoy with rice and maybe some steamed snap peas or green beans.  Guaranteed to leave your mouthy watering for more!

 

Crazy Meatloaf Pizza - Total Time: 35 mins, Oven, Comes with: Super Seasoned Green Beans - Thaw completely in refrigerator. Preheat oven to 425¢ªF.  Bake uncovered for 40 minutes, until bubbly and golden and juices run clear.  Meatloaf may have a slight pink tinge even though it is fully cooked.  Start your green beans, so it is finished with your meal.  Serve your meatloaf pizza along with your green beans.

 

Hawaiian Teriyaki Chicken Burgers - Total Time: 25 mins, Grill, Comes with: Buns - Thaw the chicken completely in the fridge. Preheat the grill to medium – high.  Place the chicken breasts on a clean, lightly oiled grill for about 7-8 minutes per side. Discard the marinade.  Place the pineapple slices and red pepper rings on the upper grill or edge of the grill for the last 4 minutes of the chicken cooking time. Turn once.  Serve on buns, with tomato and lettuce if you like. 

 

Lemony London Broil - Total Time: 25 min, Grill or Broiler, Comes with: baguettini - Thaw completely in the fridge.  Heat the BBQ or oven broiler to high.  Brush the steak with a bit of cooking oil.  Cook 4 minutes a side, plus 1 minute each side turned again, for medium-rare.  (The lemon in the marinade will cook the steak a bit more later.) Place the contents of the bag of marinade in a shallow dish.  Once the steak is cooked, place it in the dish with the marinade for 4 minutes per side.  Cover to keep steak warm.  Remove to a cutting board and slice thinly across the grains of the meat.  Serve along side some warm baguettini (provided).

 

Orange Salmon Grill - Total Time: 25 min, Grill or Broiler & Stovetop, Comes with: rice - Thaw completely in refrigerator.  Start your rice (according to the directions on the bag) so it is ready with your meal.  Preheat grill or broiler.  Meanwhile bring glaze ingredients to a boil in a small saucepan and simmer 7 minutes.  Reserve half of glaze to serve with salmon.  Grill the salmon, while basting with the remaining glaze, approx 5 – 7 minutes per side, or until salmon flakes easily with a fork.  Serve along side your rice with a zippy glass of Sauvignon Blanc. 

 

PB & Banana Stuffed Chicken - Total Time: 1 hr, Oven, Comes with: Rice - Thaw completely in refrigerator.  Preheat oven to 350¢ªF.  Bake uncovered for 50-55 minutes; baste occasionally with the leftover melted butter. Organic chicken is done when it is quite firm to cut into, and there is no longer any “chewiness” to the texture.  Start your rice (cook as directed on bag), so it is finished with your meal.

 

Popeye Pasta - Total Time: 50 mins, Oven - Thaw completely in refrigerator (about 2 days).   Preheat oven to 350¢ªF.  Bake uncovered for 45 minutes, until bubbly and golden.   Can be baked from frozen – bake at 400°F for 40 minutes loosely covered, and then a further 20-40 minutes uncovered until hot through the centre.

 

Rib Eye with Tarragon Pan Sauce - Total Time: 20 mins, Stovetop, Grill & Oven, Comes with: Baguettini - Thaw completely in the fridge. Preheat an oiled grill to medium high heat.  Preheat oven to 375°F for your baguettini - bake per instructions in bag so it is ready with your meal.  Meanwhile, heat a small skillet over medium low heat and add the butter and the shallots. Cook until softened, about 5 minutes. Turn the heat to medium high and add the wine, stock and brandy. Simmer until reduced slightly and then stir in the cream, tarragon and mustard.  Season to taste. Grill your steaks to your preferred doneness (about 5 minutes per side for medium rare).  Serve Tarragon Pan Sauce on the side of the steaks along with baguettini and perhaps a Caesar salad.

 

Snapper Florentine - Total Time: 25 mins, Oven, Comes with: Rice - Thaw completely in refrigerator.  Preheat oven to 350¢ªF.  Start your rice (according to directions on the bag), so it is finished you’re your meal.  Bake the snapper, uncovered, for 20 minutes or until fish flakes easily.  Serve along side your rice for a quick, healthy meal.

 

Thai Primavera with Coconut Chili and Lime Sauce - Total Time: 15 mins, Stovetop, Comes with: Pasta - This dish should be served within one week of assembly - not frozen. Bring salted oiled water to a boil in a large pot. Cook pasta until al dente (slightly firm). Mix pasta and vegetables. Place a large oiled skillet on medium high heat. Add pasta/veggie mix and cook for about five minutes until veggies start to brighten. Pour sauce over and mix thoroughly while heating. Serve immediately with an arugula walnut salad and a fresh peach tart - veggies are good!

 

Tropical Burger - Total Time: 25 mins, BBQ or campfire, Comes with: Hamburger Buns - Thaw burgers completely in the fridge. Take buns out of freezer to thaw. Just before cooking, season the patties with a total of ½ tsp salt & ¼ tsp of black pepper.  Lightly oil the grate and preheat the grill to medium high heat.  Grill each burger for 6 minutes per side, or until entirely cooked through.  Let sit for 5 minutes.  Serve with a side of mango chutney (included) and your favorite hamburger buns.

 

Cookie Dough Station/Make Your Own Cookies! - Total Time: 18 mins - Store your cookie dough in the fridge for up to 3 days or in the freezer for up to 3 weeks.  When you are ready to bake your cookies, remove the number of cookie dough balls you would like from the bag and return the rest to the freezer.  Preheat the oven to 350°F.  Place the balls of cookie dough 2 inches apart on a nonstick or greased cookie sheet.  Bake for 9-12 minutes if not frozen or 12-15 minutes if frozen, or until just brown at the edges.  Cooking times may vary slightly depending on what ingredients you added to your cookie dough – so keep an eye on your cookies!  Turn the oven light on and watch through the glass, as opening the door too often will affect the cookies. Let the cookies cool for 5-10 minutes before sliding them off the cookie sheet, or they may fall apart.  Enjoy!
