Balsamic Pork Tenderloin
1. Thaw completely in refrigerator.
2. Preheat oven to 500°F (you may want to make sure your oven is clean before making this one to
avoid a lot of smoking).
3. Place tenderloins on a sprayed, foil lined baking dish
4. Roast in hot oven for 20-25 minutes or until the internal temperature of the roast registers 150
degrees.
5. While tenderloins are cooking, start your rice (as per directions on bag) so it is ready with your meal.
6. Remove from the oven and let rest for 10 minutes before slicing. Serve with rice & steamed broccoli.

Tumbleweed Chicken
1. Thaw completely in refrigerator.
2. Preheat oven to 375°F.
3. Bake uncovered for 40 – 50 minutes, until chicken is cooked through, check to make sure there is no pink in the center of chicken.
4. Begin your risotto as soon as you put chicken in oven
For a browner and crispier crust, brush chicken with butter and place under the broiler for an additional minute or two.

Bali Hai Chicken

1. Put chicken, onions and almond slivers in a large skillet and cook over medium heat until chicken is cooked through, about 10-15 minutes.
2. Cook rice according to instructions.
3. Stir in the coconut sauce over your chicken and cook until thickened, about 5-10 minutes.  Serve over rice.

Thaw completely in the fridge.  Pre-heat oven to 400 degrees. Bake uncovered for 45 mins – 1 hour or until casserole is browned and has an internal temperature of 165 degrees Fahrenheit. While casserole is cooking steam provided broccoli and serve on the side. Enjoy!
